The Peru Table ("we", "us") is a trade name of Pelloso Holdings LLC, a United States limited liability company. We operate theperutable.com and offer small-group culinary walking tours in Lima, Peru. This policy explains what information we collect, why, and the choices you have.

Information we collect

• Contact and booking details — your name, email address, phone/WhatsApp number, tour date, group size and dietary notes, when you enquire or book.
• Messages — when you contact us on WhatsApp or by email, we receive the content of your messages. Our WhatsApp line may be answered in part by an automated assistant; a human can always take over on request.
• Payment information — payments are processed by Stripe. We never see or store your full card number.
• Usage data — basic analytics about visits to our website (pages viewed, approximate location, device type), collected through cookies or similar technologies.

How we use it

• To answer your questions, arrange and deliver your tour, and send booking confirmations and reminders.
• To process payments and refunds.
• To accommodate dietary restrictions and safety needs during the tour.
• To improve our website and services, and — only if you opt in — to send occasional updates.

Sharing

We do not sell your personal information. We share it only with service providers needed to run the business — Stripe (payments), Meta Platforms (WhatsApp messaging), our booking and email providers — and where required by law. Restaurant partners receive only what is needed to host your table (first names, group size, dietary notes).

Retention

We keep booking records for as long as needed for legal, tax and accounting purposes, and conversation history for up to 24 months, unless you ask us to delete it sooner.

Your rights & data deletion

You may request access to, correction of, or deletion of your personal data at any time. To request deletion, email hola@theperutable.com with the subject "Data deletion request" from the address (or mentioning the phone number) you used with us. We will confirm completion within 30 days, except for records we are legally required to keep (e.g., invoices).

Cookies

We use essential cookies to make the site work and analytics/advertising cookies (such as Google Analytics and Meta Pixel) to understand how visitors find us. You can block cookies in your browser settings.

Children

Our services are directed to adults. We do not knowingly collect personal information from children under 16 online.

We may update this policy from time to time; the "last updated" date above reflects the current version.
